As a child I called it "Cauli Tree". As an adult I always skipped it on the veggie trays. Now, I've found a way to eat this delightful, afforadable, low carb and super healthy vegetable!
Roasted Parmesan Cauliflower
Prep Time: 15min Cook Time: 25-30min
1 Large Head Cauliflower
3 Tablespoons Olive Oil
1/3 Cup Grated Parmesan Cheese
1 Tablespoon Chopped Fresh Parsley
Pinches of Salt & Garlic Pepper
Lemon Juice from Half a Lemon
1. Preheat the oven to 450 degrees F. Place foil on large cooking sheet or use a large casserole dish and use cooking spray.
2. Place the florets of cauliflower in a large bowl, add the 3 tablespoons of olive oil, sprinkle on the garlic pepper and salt, drizzle with the lemon juice, and be sure to shake the bowl so the cauliflower is evenly covered.
3. Pour mixture on the cooking sheet or into the casserole dish.
4. Bake for 25 minutes. Stir/flip around the cauliflower halfway thru (about 12min point) to be sure it's cooking evenly. At 25 minutes, pull the cauliflower out of the oven, top with Parmesan cheese and parsley and put back in oven for 5min or until the cauliflower is golden brown and the cheese is melted.
